PROFESSIONAL COOK DEFINITION: A professional cook includes the following: A current line cook, sous chef, or executive chef in an active food service location. A graduate of a licensed culinary program.
INGREDIENTS All main, curveball, bonus, and pantry ingredients will be supplied during the competition for professional cooks. Pantry items will not be provided for home cooks. If a mandatory ingredient is not vegetarian, a vegetarian option will be available. Supplementary ingredients, seasonings, and condiments are the financial responsibility of the competing cooks.
EVENT DESRIPTION: This 90-minute competition features the utilization of a themed main ingredient. This ingredient will be unveiled on June 1 on this site. Home cooks will grab their theme ingredient and return to their home kitchen to cook. Professional chefs will cook onsite. A culinary curve ball will be introduced 45-minutes into the competition, forcing a team approach for home cooks, traveling back and forth through the city. A non-mandatory bonus ingredient will also be unveiled at 45-minutes, but will present a culinary challenge to competitors, who must decide whether it can be incorporated into their dish.
Official Rules: Teams must present a composed dish featuring the main and curveball ingredients (bonus ingredient is optional) at the host site before time expires. Dishes are judged in the order of arrival. The E.A.T. methodology (from the World Food Championships) will be used to determine the final standings. For home cooks, team-themed, spirited apparel is rewarded with medal points related to the Eastside Games community standings.
The importance of the main theme ingredient
The emphasis on the main theme ingredient will be an important evaluative component in the taste and execution portion of the scores for participating chefs. Dishes that overwhelm the main ingredient may suffer from low execution scores.
The importance of the curveball ingredient
The curveball ingredient must be 100% discernable in the dish. If it is covered up by other flavors, it will negatively impact taste and execution scoring. Merely including the curveball ingredient does not qualify as a proper usage. Additionally, the curveball ingredient should not overshadow the main ingredient. Balance is key, with the main ingredient as the star and the curveball ingredient as supporting cast.
Bonus ingredient
The bonus ingredient will be a polarizing culinary addition. It must make a noticeable improvement in the flavor or quality of the dish to qualify the dish for a bonus point in execution. But, polarizing ingredients delivered late in the competition can negatively impact the outcome, so cooks must determine whether it’s worth the risk.
What must be prepared for judging?
A “Composed Dish”: Each chef must prepare one composed dish where an entrée and at least one side acts as one complete dish.
At Least One Side: At least one complimentary side dish is required for judging. Cooks must justify their side dish to the judges if it is incorporated into the entrée. While judges will make every attempt to accept incorporated sides, it remains an issue of judges discretion. For instance, including beans in a taco as an incorporated side may not make a compelling argument for the judges.
Size Limits: There is no size limit for the final dish, but cooks should consider how four judges will taste the dish in a way that allows for the appreciation of the overall concept and the required ingredients. Final dishes presented as four samples for judges are allowed (four composed tacos served on a bed of Spanish rice, for example) but must still represent the composed dish, where entrée and sides act as the total entry.
Plateware: Cooks must provide plateware for the final composed dish. Traditional silverware will be provided for judges. Plateware will be returned to competing cooks at the end of the competition.
Timing, heat, presentation, and scoring.
Judging begins in the order of completion (or arrival for home cooks). Cooks may turn in early for judging. Dishes are judged live at the host site. Judging takes 3-5 minutes per dish, so some late arriving teams may have to wait for their dish to be judged. While judges will not deduct points from dishes that have lost temp due to judging, home cooks should consider warming methods (hot box, hot plates, insulated warmers, etc.) for hot dishes as they wait for judging, so their flavors and temps are represented as they intended.
When called up for judging, cooks must present their dish and explain the use of ingredients for the judges. As the judges taste the dish, cooks must remain available for questions. Judges will hand the dish back to the cooks when tasting is done, and then score the dish.
When the dish is returned to the cooks, it will no longer be needed for the competition. Cooks are then encouraged to share their dish with other competitors (when possible) but cannot share dishes with spectators/members of the public.
Cooks not abiding by the official rules will be judged but will lose their eligibility for final awards. Participating cooks must submit registration prior to June 10, 2024, via the Edingames.com registration link: http://www.edingames.com/registration.html.
Payment for registration fees must be made on June 17, 2024 at the host site prior to 6 PM. Submit questions to [email protected]
